On the other hand, honey made from the tupelo plant (Nyssa genus from the sourgum family, a type of tree in North America), is known for having a strong and fruity taste; But it almost always has a clear yellow color. Bees use whatever pollen they can find, so if many plants bloom in one area, the resulting honey will be a unique blend of different types with unique colors and flavors. Honeys produced from single-flowered plants, such as clover, have a consistent flavor; But they can only be produced when only this plant is available in that area.
Not all honeys in stores are light or dark; Rather, most of them have a golden orange color, which of course varies from one brand to another. You might think that these honeys are completely natural; But the fact is that, in order to produce honey with such a color that is between dark and light, it must be processed, mixed and pasteurized intensively to make it this way. In fact, those completely dark or light honeys that look unusual have a completely natural appearance and are most likely pure local honey. According to beekeepers, the color of honey varies from very light to very dark; But pure, raw and unfiltered honeys are almost always dark and opaque, and these types of honeys have natural pollen and a healthy flavor. When buying natural honey, you should always buy it from a trusted store or one with a honey test sheet to be sure of its naturalness.
